I have been trying to make a bread in my machine that has no rice, potato, eggs, or Dairy Free (since it is rice/potato based). I have the Bette H. bread book and it is great. I can make a great bread with bean flour. Her bean blend is fantastic. Now, I need to rotate or I am afraid my son will become sensitive to bean flour! Soooooooo... I am trying to come up with another bread - Help! I have tried the BH Basic Sorghum bread in her book. I have made adjustments to the ingredients, one of which is to use ground NutQuik in place of the dry milk powder, and arrowroot in place of cornstarch (to rotate out the corn). I have made 3 loaves and each time, the loaf rises, bakes. It looks fine. But when I remove it from the basket, it is just a big crust that is empty inside!! There is a blob of dough on the bottom inside, but the rest of the loaf is empty! Got any ideas? Do you think I need to use the recipe for a bigger loaf? But what about the dough in the bottom? it doesn't even cook! I hope you don't say to bake it in the oven. I am just not there yet, if you know what I mean (even though it has been 1 1/2 years!).
