Marci's Bread/Question on GFCF Thin Mint Cookies

Well, I am trying my LAST (yeah, right) attempt at bread. I am trying the

Marci's bread recipe. I halved it because I didn't want two loaves to

flop, LOL. Well, I am doing this after my son has gone to sleep, so I

couldn't use the mixer. Plus, I had to sub millet for the rice (will let

you know how that one works out); we can't have rice here. Didn't have

regular yeast, so had to sub the kind you add to the dry ingredients. I

found a smaller pan to bake it in, and it is rising nicely right now in

the oven (didn't have time to let it rise, but the recipe said that was

okay). Couldn't figure out to halve an egg, and didn't have egg replacer,

so I used two eggs (well, that might help the leavening too, LOL). I have

a very hot, good oven, so 400 degrees is more like in between 425 and 450

somewhere, LOL.

I have ambitions to make and freeze pancakes, a batch of GFCF Thin Mint

Cookies, and a batch of blueberry muffins this weekend, plus chicken

nuggets. I will see what I can accomplish.

For the thin mint cookies, do I really need to refrigerate them? Can't I

just freeze them? Also, how long (max) can I keep these in the freezer

before using? It would be so nice to have some " slice & bake " cookies I

can take out to make fresh with my son. Thanks.
