I was jsut saying to someone the other day, that if I knew how to get started, I would start a frozen meal company that catered to low carb, because it seems to be an untapped market except for the horrendously expensive Atkins, which you have to send away for. Healthy Choice, Lean Cuisine and others are a joke for low-carbers, as they are all carbs and little meat (so much worry about fat!). Some lady named Amy tapped into the vegetarian market a few years back, and now I see her vegetarian dinners in almost every store -- she makes a kick-butt veggie meatloaf that I LOVE. The person who sees a need, and fills it, can make a fortune. I hope this company does well and expands beyond Wal-Mart, since we don't all have those (and boy do I miss 'em when I see how much I have to spend everywhere else!). Thanks for letting us know!
