" Thanks to who ever posted this several months ago when I needed to make graham crackers. I love recipes that are so versitile! Sharon in Virginia Graham Crackers Use animal cookie cutters, sprinkle with cinnamon/sugar. Great! Makes enough cut crackers to fill two jelly roll pans. 3/4 cup butter substitute (Fleischman's or Mother's margarine) 1/4 cup honey 1 cup brown sugar 1 teaspoon vanilla 1 1/2 cups brown rice flour 1 1/2 cups GF flour mix 1 teaspoon xanthan gum 1 teaspoon salt 1 teaspoon cinnamon 1 tablespoon GF baking powder 1/2 to 3/4 cup water ***careful, err on the side of firmer than too soft Cream butter, honey, sugar and vanilla. Mix dry ingredients in another bowl. Add some calcium powder and ground flaxseed to the dry mix if desired. Add dry ingredients to creamed mixture. Add water slowly, stop when dough begins to form a ball. Refrigerate dough for at least 1 hour. Preheat oven to 325. Roll dough onto floured parchment paper, plastic or counter. Roll until about 1/2 inch thick. Cut into squares. Transfer to greased cookie sheet. Prick with a fork. Sprinkle with cinnamon and sugar. Bake 20 - 30 minutes. Don't let them get too brown. Take them out after 20 minutes for a softer cookie-cracker. Quick Squares: Form large ropes, 3-inch diameter cylindrical shapes. Square off each to shape a long rectangular box (I forget the name of this 3-D geometric shape). Chill. Slice to make easy square crackers. Gently press a cookie cutter into each cracker until design is etched on the top. *Family Favorite! P & J like these designs better than fork pricks! Quick Cracker Nickels: Roll dough into ropes the diameter of a nickel. Chill. Slice into 1/4-inch nickels. Bake. Cinnamom Graham Crackers: Before baking, sprinkle with cinnamon sugar. Honey Cinnamon Graham Crackers: After baking, brush with honey and sprinkle with cinnamon sugar. GingerBread Men & Houses: Add 1/4 teaspoon cloves. Substitute molasses for honey if desired. Ritz Crackers: Decrease honey to 1 tablespoon, use 1/4 cup white sugar instead of brown sugar (or all white sugar, no honey), leave out vanilla and cinnamon. Add water in very small amounts, probably less then with graham crackers. Chill, roll thin (about 1/8 inch thick), cut with a fluted-edge biscuit cutter. Transfer to a cookie sheet. Prick with fork. Spray with oil. Salt. Bake. Club Crackers: Omit honey. Cut into rectangles using pizza cutter. Prick with fork. Spray with oil. Salt. Bake. Special Treat Graham Crackers: Dip in melted chocolate.
