Hi- never made these cookies, but I guess this recipe can be used and you

juust cut out the gingerpeople.

Ginger Cookies

Ingredients:

¾ c. shortening

1 c. sugar

1 tsp. xanthan gum

1 egg

¼ c. molasses

1 tsp. fresh lemon juice

bit of finely grated lemon peel

2 c. GF flour mix*

½ tsp. salt

1-1/2 tsp. ginger

1 tsp. cinnamon

¼ tsp. ground cloves

granulated sugar (to roll cookies in)

Preheat oven to 350°. Cream shortening and sugar. Add egg, molasses,

lemon

juice and lemon peel and mix well. Sift and combine dry ingredients and

add

to creamed mixture.

Roll into walnut-sized balls, then roll balls in granulated sugar. Place

cookies about 2 " apart on cookie sheets. (I cover cookie sheets with

parchment paper to prevent sticking.) Flatten them slightly. Bake at 350°

for

10-12 minutes for chewier cookies, longer for crispy snaps.

* GF flour mix is Bette Hagman's mix:

2 parts white rice flour, 2/3 part potato starch flour, 1/3 part

tapioca

flour
