Date: Sun, 12 Aug 2001 15:30:16 -0400 Subject: Gingewr cookies Message-ID: Ginger Cookies Ingredients: ¾ c. shortening 1 c. sugar 1 tsp. xanthan gum 1 egg ¼ c. molasses 1 tsp. fresh lemon juice bit of finely grated lemon peel 2 c. GF flour mix* ½ tsp. salt 1-1/2 tsp. ginger 1 tsp. cinnamon ¼ tsp. ground cloves granulated sugar (to roll cookies in) Preheat oven to 350°. Cream shortening and sugar. Add egg, molasses, lemon juice and lemon peel and mix well. Sift and combine dry ingredients and add to creamed mixture. Roll into walnut-sized balls, then roll balls in granulated sugar. Place cookies about 2 " apart on cookie sheets. (I cover cookie sheets with parchment paper to prevent sticking.) Flatten them slightly.
