Okay, here is the recipe I have (out of GFCFDiet.com " Gluten & Casein

Free Cooking " book). You could probably substitute corn flakes if you

can't find almond flakes, and you could substitute whatever fruits you

might want.

Blessed Mother of , 6yo w/Autism, " Heaven's Joy, " and lots of

energy

Cranberry Apple Crisps by R. Howe

Filling:

6-7 medium Granny apples, peeled, cored, and sliced

1 c. whole berry cranberry sauce (Ocean Spray)

3/4 c. sugar

2 TBSP. GF flour mix

Topping:

1/4 c. nuts, chopped

1 c. almond flakes (crush by hand)

1/3 c. packed brown sugar

1/3 c. GF flour mix

1 tsp. ground cinnamon

1/4 c. GF margarine, melted

GFCF vanilla " ice cream " (optional)

Preheat oven to 375 degrees. For filling, place apples in a 9x13 baking

pan. Combine cranberry sauce, sugar, and GF flour, mix well, Pour

cranberry mixture over apples; toss to coat evenly. For topping, combine

nuts, almond flakes, brown sugar, GF flour, and cinnamon. Add melted GFCF

margarine to ingredients; mix well. Sprinkle topping over fruit mixture.

Bake 35-40 minutes or until fruit is tender. Serve wam with GFCF " ice

cream, " if desired.
