I did have one problem with it--after I covered it for the ten minutes (while it was cooling), it shrunk down to half the size vertically (about 2 " tall), making it unsuitable for a sandwich-style bread. Any tips on how to prevent this? I want to try this one again (it tasted REALLY good); I thought about oiling the top and leaving it uncovered while it cools, and letting it cool completely before removing it from the pan. Any other ideas? BTW, this is the closest I've had to any yeast bread coming out (gluten-free or regular). It was not raw or completely hollow. Does anyone have any good cookie recipes (especially ones that I can use a sugar substitute or honey with) that are GFCF? I'd like my mom (diabetic) to be able to eat these too. Thanks in advance. I really like the recipe for Gingersnaps in ' book, Special Diets for Special Kids. Sorry, I don't have it handy, maybe someone else could copy it? Anway, I think I used brown rice syrup for the sweetener, which would be like honey, and probably ok for your diabetic Mom, I'd imagine. I'll look tomorrow when I have time, and see exactly how I made it. (While someone else copies it in the meantime????? Hint, hint.......
