Chocolate Zucchini Cake

My friend Betsy has the BEST recipes so I called her to get some and do some

" conversion baking " yesterday. I didn't like the way the texture of the

Zucchini Bread came out, so I played with the flour and made this cake from

another recipe. It is soooooooooooo good. I brought it with me to a prayer

group last night and I was laughing watching all the people grabbing at this

cake and the brownies I made. (I'll post the brownies in the next email)

Chocolate Zucchini Cake

1/2 c soft margarine (I used Soy Garden)

1/2 c oil (I used Safflower)

1 3/4 c sugar (I used vanilla sugar -- sugar that has a vanilla bean stored

in the container)

1 teaspoon vanilla (I skipped this because I used the vanilla sugar)

2 eggs

1/2 c sour milk (I used soy milk with 1 tbl. lemon juice -- actually even

used chocolate soy milk)

2 c finely diced not shredded zucchini (I used my course grater)

2 1/2 c flour (I used 2 cups sorghum flour and 1/2 c of sorghum blend which

is 2c sorghum, 2/3 arrow root, 1/3 tapioca)

I'm going to play with it and see what the texture is like with just sorghum

flour or do I need the other flours

1 1/2 teas. xanthan gum

4 TBL Hershey cocoa

1/2 teas. Baking Powder

1 teas. Baking Soda

1/2 teas. cinnamon

1/2 teas. clove

Cream margarine, oil, and sugar. Add eggs, vanilla and sour milk. Mix all

your dry ingredients together, then add to the creamed mixture. Beat in your

strained zucchini. Spoon unto a greased 9x13 pan. (I used mini bunt pans)

Optional: sprinkle with 1 c chocolate chips so that you don't need frosting.

Or put powdered sugar and water glaze on once cooled.

Bake at 350* for 40-45 minutes. Because I used the smaller pans I just kept

checking them with a cake tester. I had set my timer at 30 minutes and just

kept checking.

I hope you can get the idea of what I did and come up with your own version.

I just had to get the recipe out for those with the gardens full of

zucchini. (Hint: don't tell your family about the zucchini. My sons loved

the not so good zucchini bread until he found out it had zucchini in it.)
