I made it for my son's birthday party yesterday and people were raving about how good it was even before I told them it was GFCF. (When they found out it was GFCF, they were really excited about it!) The cake came out moist and tasty and, seriously, exactly like regular wheat cake. I also made a yellow cake mix from Miss Roben's, but it didn't turn out as well. Not sure if I did something different, but although it tasted OK, you could definitely tell it was " different. " To give you an idea of how much the mixes yield, I made 24 mini-cupcakes (because my son prefers these) from each mix and had enough batter to make one layer each from the mixes. I had a silly cake with one chocolate layer and one yellow layer, in keeping with the party spirit. <g> I made the frosting recipe that was posted on the list recently, which turned out very good and was easy to make. (I'll send you the recipe privately if you don't want to search the archives.) Best wishes, Third, my sons birthday is coming up in 3 weeks and I have to make a birthday cake. After my experience with the bread I am scared to death of not making something that " everyone " finds great tasting. I ordered a package of the chocolate cake mix from Miss Robens but after reading the package I decided it wouldnt be large enough. I also am concerned about the taste, after the bread flop. Anyone have experience with this, or know of a cake recipe or mix that is an absolute definate great tasting cake? I have several food critics in my family. The mix makes a nice cake (8x8) for the candles plus 12 cupcakes. And I have yet to have the Wunderbread come out for me either! & Garry, parents of (11 ds), (9 ds), JJ (7 ds/autism/celiac), (6 ds/ADHD/Celiac), and Esther (4 ds). All adopted. THe bread is actually very tasty so I am not complaining.
