In my recipe it was written that it is mushy if you use white rice flour so maybe you should try using brown rice flour. It comes out excellent for us. Came out a little better, but still a little hard on the outside to use as a roll, and a little bit gummy in the middle, still. (They love it as donuts, deep-fried, though, which we did this morning - in safflower oil... I'm gonna put all my weight I lost back on, I think!)
