I think we're still less than 100% GF/CF, because I keep reading about cross-contamination issues and because there are still some occasional cheating episodes, though those have reduced considerably in the past month or so. I think it's easy to remove casein almost completely and immediately. Gluten's harder, but if you're up to it just read up on the 'bad' ingredients, start reading labels, and make up your mind not to give your son anything containing either casein or gluten. If you're able to avoid eating out and prepare everything from scratch then the diet's pretty easy... especially if you can stick to basic ingredients. As you probably already know, all meats, fish, fruits and vegetables are fine, as well as rice, nuts, corn. That's assuming you have no other issues with any of these foods. There are plenty of folks on this list that can help, and with lots of knowledge and experience with the diet.
