Guest guest Posted July 14, 2001 Report Share Posted July 14, 2001 Can I tell you what I use for flour and in almost everything it works cup for cup as regular wheat flour, I mix 2 pounds of brown rice flour, 2 pounds white rice flour, 1 pound tapioca starch and 1 pound potato starch flour. I sift it all together and store it in the freezer, then I use 1 tablespoon of Xanthan gum for each 3 cups. So far the only recipe I haven't been able to use this with is my chocolate chip cookie recipe. I don't know why I am having such a hard time with Ch chip cookies!
