Guest guest Posted March 4, 2010 Report Share Posted March 4, 2010 That's probably a major factor (imho) in how it goes--go slowly, very slowly with it. I started out cooking batches of brownies, eating it off the spoon and now I don't eat it. If you could make it, freeze it, eat a very small amount over a long period of time then you may tolerate it better over time. At least, that's what I've done with other things and it seems to work better. Like I can eat salads a lot more often than I used to but I won't eat over five nuts a day. I kind of blame that on gorging in the first year. I don't know your situation though. Debbie 40cd I am a newbie to nut butters- just introduced them. I have a bag of blanched almond flour from Lucy's Kitchen. I fill my mini cuisinart about halfway up with the flour and add some olive oil. After about 30 seconds it resembles a smooth butter- you can add oil as needed. It is really good with sea salt and honey mixed in too!!! I've never been a huge fan of pecans or walnuts, but I think this resembles peanut butter. Guest guest Posted March 5, 2010 Report Share Posted March 5, 2010 I’m someone who could tolerate a spoonful of peanut butter by the 3rd week on SCD (my body craves it) --- but nut butters will have my upper GI in severe distress within an hour. Still can’t touch a nut butter, even after six years on SCD, but I can eat small amounts of peanut butter; can’t bake with it though. However, in the first 4 years on SCD I had to make my own peanut butter, as all of the brands I tried caused mild but noticeable reactions, the kind of reaction I knew was due to some ingredient being included, not the symptoms triggered by my dysfunctional upper GI. Organic or natural peanut butter doesn’t always mean pure and unadulterated [sigh]. I still do make my own peanut butter most of the time, but have, on occasion in the past two years, been able to tolerate Smucker’s Natural peanut butter; it does save time but doesn’t taste as good as homemade. Many people have problems digesting peanut butter, especially in the beginning stages of SCD. Peanuts are a common allergen. It is considered an advanced food. So, like everything else on SCD, let your body set the “rules”. Some people do OK with peanut butter, many do well with nut butter. All depends on the individual. Kim M. Do I just throw in the pecans raw or bake them first? Will I need to put them in the blender as does and add oil? But here's how I make relatively smooth nut butters from pecan meal or almond flour. This isn't smooth smooth like bought but it's a lot smoother than crunchy nut butter if that makes sense. First I use my Miracle Mincer which looks like it's similar to the Mini Cuisinart. This gets it to a paste. It doesn't hold a lot, maybe 3/4 cup, so I scrape most of that out and make a second batch. Then transfer to the big blender jar (so I have the hole in the top.) I add some oil, hard to say how much, until it will process, really. In a few minutes it's really pretty deent. If my 45 year old blender (Go, Oster!) gives up the ghost one day I will probably look at an Omega or VitaMix or something really heavy which I understand can make really smooth nut butters by virtue of being able to run a long time without burning the motor out. The almond flour (even a little bit like "breading" on chicken) gives me stomach pain and knowing that is a more advanced food I thought I should try pecan butter. Seems I can munch on whole pecans with no problem. Now I have to figure out which one the nut butter attachment is!
