Chewy. Double and bake in 8x12 cake pan except use 1+1/4 cups sugar total and 3 eggs. Foil makes clean up quick! Recipe from http://www.livingwithout.com/recipes_desserts.htm 1/4 cup Rice flour 1/4 cup Sweet rice flour 1/4 cup cornstartch 1 tsp baking powder 1/4 tsp baking soda 1/2 tsp unflavored granulated gelatin 1 tsp cinnamon 1/4 tsp salt 1/2 cup White sugar 1/2 cup Brown sugar 1 cup chopped dates (generous) 1 cup chopped pecans - I used Brazil & Pecans = Heaven! 2 eggs 1 tsp vanilla extract · Adjust rack one-third up from bottom of oven and preheat oven to 375 degrees. · Line a 9-inch square pan with aluminum foil and brush or spread butter (or dairy-free alternative) over foil. · In a medium size bowl, thoroughly mix together: flour, baking powder, baking soda, gelatin, cinnamon, salt and sugar. · Add the chopped dates and toss with your fingers to coat each piece well. Add the nuts and toss again. · Beat the eggs and vanilla well and add to other ingredients. Stir thoroughly until all the dry ingredients have been moistened. · Spread dough evenly in prepared pan. Bake for 25 minutes. Remove from oven, let stand for 10 minutes. Cover with rack and invert. · Remove pan and foil, cover with rack, invert and let cool right side up. · Cut into bars or squares.
