What I pass off as fried rice is this. Its a quick and my son loves

it. I use it for his breakfast or lunch or as a side for dinner.

Ingredients

Precooked Meyer Bacon (to taste)broken up into small pieces

Precooked rice I usually use @ 2cups

One or 2 eggs depending on the amount of rice

GF soy sauce if you like it.

Green onions chopped fine if you like.

Use a frying pan throw in bacon and onions first until bacon is just

warm, then add egg(s)and scramble, then thrown in the rice to heat it

up and then throw in a small amount of soy sauce to taste. Stir

until warm.

Its a pretty indestructable dish, as long as the eggs get cooked.

This is my version:

chicken (rolled in starch) or ham cut into small bites

green onions-cut small

celery-diced real small

carrots-cut into thin strips (julienne) about an inch long

2 eggs, whisked

frozen

peas

cooked, cold rice

soy sauce

oil

Put enough oil to coat hot (real hot) pan or wok. Fry starched chicken, or

ham, add onions, celery and carrots till onions are opaque. Add eggs and

scramble. Remove all. Add more oil to coat pan, and fry rice and peas to

warm. Stir in the vegetables, eggs. Add soy sauce to taste.

I haven't given any real amounts- it's pretty much up to taste. And when I

cook this, I'm feeding nine so I use quite a bit of everything! Also, the

cooking is done quickly with a hot pan and vegetables should retain some

crispness. The ham is not rolled in starch.
