I'm from Waterloo, and when I was growing up, it was a treat that we got in fast food places, drive-ins and restaurants, every bit as popular as hamburgers and pizzas. Any time I've made them in Illinois or Wisconsin, though, people think it's " okay " but don't go into the taste meltdown I do. I believe this is a case of familiarity not breeding contempt - that is, Iowans loving pork, just like we love sweet corn. I think the reason is that most of the produce gets sold out of the state, and it's a rather rare treat, not something most people can afford every day. (Cheese isn't less expensive in Wisconsin, and beer doesn't run out of the faucets, either!) For pork lovers: take your favorite pork slice and some carrots and sliced potatoes or acorn squash, sprinkle with oregano, a bit of honey and brown sugar, gfcf margarine, wrap it in foil, and bake at 350 for an hour to hour and a half. (My older sister still lives there) Graduated from high school in Cedar Rapids. The breaded tenderloin always was a favorite, so I can't wait to try it.
