Hi again Toby,

It's me from Rochester, hope things are going well. Our little one

had a huge spurt in language and connectedness this past weekend and we start

33 hrs a week of ABA this week. I make 2 loaves a week of the following

bread. My maker is 1 and a half lb. Nutritionist, and you set it by type of

bread and type of crust. I use the Rapid White cycle and the medium crust

setting. this is a variation on the recipe in 's book:

In small bowl scramble 1 large egg. Add 1 tsp. apple cider vinegar and 1 cup

very warm water. Pour in the bottom of your breadmaker. In a larger bowl

combine 3/4 cup EACH: Rice flour, tapioca flour and potato starch flour. Mix

in 1 tsp. xanthan gum, 1/3 cup Dairy-free powder and 2 tsp GF salt. Gently pour

this into the breadmaker so it floats on the liquid. Make a small well in the

center of the dry ingredients and add 1 and 1/2 tsp GF yeast, make sure it

doesn't touch the liquid. Set it and forget it! My cycle takes 1 hr and 58

minutes. you MUST remove it immediately at the end of the cycle. If left, it

will collapse. when it is cooling, turn it frequently or it will become

misshappen. when it is COMPETELY cool, slice. We have had great success with

this and even my husband will eat it. Good luck!

Do you have to use apple cider vinegar. Will a GFCF

White Vinegar work? My older son is allergic to apple.
