Well, I have found an interesting sounding one and want to ask about a substitution. This is from an old Woman's Day encyclopedia of cooking, 1966. Volume 6, page 939 Soowar Ka Gosht Vindaloo (Sour Pork Curry) 2 lbs lean pork, cut into 3/4 inch cubes 1/2 cup vinegar 4 medium onions, chopped 1 tablespoon minced ginger (or 1.5 teaspons powdered) 1 tablespoon mustard seed 1 teaspoon ground turmeric 1/2 teaspoon cayenne 1/4 cup oil 1 cup chicken broth 1 cauliflower (instead of Illegal: 6 potatoes) marinate meat in vinegar, onions, garlic and seasonings for at least 2 hours. Place in casserole with oil and broth. Cook over medium heat for 30 minutes. Add cauliflower (potatoes) and cook covered, another 30 minutes until everything is well done and tender. Add more broth if necessary. serves 6 OK, obviously we need something else besides the potatoes so that's why I thought of cauliflower. But I haven't tried it yet. I need a few opinions on whether this would work, cooking-wise, and also flavor-wise. I think the basic stew sounds delicious though for myself I'd have to leave a couple of seasonings off. Guest guest Posted March 16, 2010 Report Share Posted March 16, 2010 Thanks, yellow squash sounds good, too. Most of the time I don't have to worry about anyone but myself in this. I know I'm lucky! I like yellow squash and it holds up well when you cook it for a long time. Not sure it'd replace potatoes for other people but I usually use it when something calls for them.
