I'm looking for cod recipes too so I'm glad you posted it. On the tomato sauce, I'm sure they'll say to reduce down tomato juice. Some people may say certain 'from Italy' brands are legal because they are so strict in labeling. However, you can make your own from either tomato juice or fresh tomatos.
