Guest guest Posted September 8, 2001 Report Share Posted September 8, 2001 This is a recipe I use for chocolate pudding and it is very good. 2/3 cup sugar 1/4 cup hershey's cocoa 3 tbsp. cornstarch 1/4 tsp. salt Mix above ingredients in pan and then add 2 1/4 cup milk Again mix the ingredients with the milk Cook on med. heat until it comes to a boil, stir often, and allow to boil for 1 minute. If you refrigerate it for more than a couple of days, though (should it last that long), you can cut it into fudge (I'm not kidding--makes great candy, too). It is corn, milk, gluten, and egg free, and can be made soy & chocolate free. You can mix the dry ingredients ahead of time as a mix if you like. Also, you could just add vanilla rice milk to the mix & microwave; that's all you would need (coconut milk is creamier for pudding, though). This is a quick & easy recipe for dessert (lunchboxes too!). Vivace, Proud 25.5yo w/Asperger's Syndrome & Dysthymia Blessed Mother of , 6yo w/Autism, " Heaven's Joy, " and lots of energy Chocolate Coconut Pudding--microwave 1 can coconut milk + enough water to make 2 cups liquid 6 T. tapioca flour 1/3 c. sugar 3 heaping T. semisweet chocolate chips (or could sub choc. pieces out of Miss Roben's for soy free or cocoa powder) 2 t. vanilla 1 T. butter substitute (optional) Combine the sugar & tapioca flour. Add coconut milk & water. Whisk together (or better if you have an electric hand mixer). Add chocolate chips, pieces, or cocoa. Microwave for four minutes, stirring after every minute HARD. It will look thick early on, but, if you don't cook it long enough, the flour in it will cause it to taste raw. After cooling, add vanilla & butter substitute. Pour into dishes.
