Amber,I usually blend the olive oil with sunflower oil to make it lighter tasting. AmeliaTo: BTVC-SCD Sent: Mon, February 1, 2010 3:24:06 PMSubject: mayonnaise

I've tried to make mayonnaise a few times with extra virgin olive oil. I really didn't like the taste of it at all. Is there another type of oil I should use to help the taste? What types of oils do you guys use if you are making your own mayo?

Thanks,

Amber

Thanks, Amelia. Sorry about starting the new post. I did a quick search, but I

obviously didn't look hard enough. I'll try the sunflower, and hopefully it

tastes like the store bought kind!

I use sunflower or safflower. Grape seed oil would probably be pretty mild too.

I've never tried with EVOO, but I bet it does have a strong flavor.

Olive oil, IMO, has too much flavor of its own to make good

mayo.

I use safflower or sunflower. Some people like grapeseed oil. Steer clear

of anything labeled " vegetable oil, " as ghu only knows what's

in it.

Alyssa,If you want to try it with butter, which sounds really interesting by the way, you should do it with ghee (clarified butter) so that you have a pure oil.AmeliaTo: BTVC-SCD Sent: Mon, February 1, 2010 7:37:32 PMSubject: Re:

Yeah, that's why I was wondering. I never use mayo b/c I haven't found a recipe that tastes good and is actually healthy. I tried half coconut half EVOO, which was too strong. Let me know if you find a yummy mayo recipe using a healthy oil! I was thinking about using butter, but never got around to it...

Actually, I have a Caesar salad dressing recipe which involves butter,

and I found I liked extra butter, melted.

I might go with grapeseed oil and melted butter, about half &

half.

Yes, " sub, " short for " substitute. Agave is illegal. I sub honey for agave in

elana's recipes.

No. It is not legal, that's why I say to sub(stitute) honey for agave :)

Right, but if you look at what you actually said, you said to substitute

agave for honey, not honey for agave.

" If you're more advanced into the diet and want to give this a shot,

you can sub agave for honey " is what you said. Don't you hate it

I recently tried walnut oil as I thought I had read someone on this list used it. It was very flavorful with a trace of a smoky flavor. I know walnut oil is very healthy. I have used EVOO and liked it.

Walnut oil--love homemade mayo with that. I have also used light

extra virgin olive oil and half safflower oil which was good--if I use

all safflower, I get nauseas.

Walnut is really good though.

Whoops! ::laughs:: Yes, it's been happening a lot lately. I'll just blame the

flare or whatever is going on with my body at the moment for my inability to

write correctly! :)
