I've been working on a recipe for tasso, but haven't had a chance to try

it out. Making your own sausdage is pretty easy -- you just have to

figure out what spices you want.

And for small amounts of smoking foods, I recommend the Cameron's stove

top smoker.

I can't tolerate the grease so I use a lot of smoked paprika.  My mom cannot tell the difference if it's a stew/soup.  I also use it with baby lima beans also.  Wouldn't salt pork just have salt and pork?
