It does sound good.

If you ever get around to eating

cashews, Eat Well Feel Well has a recipe

for a cashew taco in it. One of these days,

i " ll try it, because given how good those

cashew crackers are, I bet they are pretty

demned tasty.

I think I may get around to buying that taco

iron sooner rather than later now.

Hi Alyssa! I'm so glad you liked it. And when you are able to eat cheese (I

think I remember you recently saying that you are close to trying some?) you can

add some shredded jack or cheddar on top. Geez, I wish I had that for dinner!

Mara- I can't wait until I can tolerate nut flours so I can try to make a

" taco " !!!!
