I've got the pasta, sauce, and mozzerella cheese figured out, but does any one have a suggestion for a ricotta substitute? Maybe something can be made from tofu? That is our choice but we are only GF & Garry, parents of (11 ds), (9 ds), JJ (7 ds/autism/celiac), (6 ds/ADHD/Celiac), and Esther (4 ds).
