Guest guest Posted March 18, 2010 Report Share Posted March 18, 2010 It's my understanding that the initial polysacc. in agave, inulin, is enzymatically converted to fructose and glucose. Is there any inulin left in agave syrup? I am not planning on eating it, I just want to clarify the specifics. A newbie has asked me and she is thinking that agave is all fructose and glucose which is what all the info states. Putting aside the health issues of fructose, I could see her point; honey is glucose and fructose. (Of course there is also the HFCS contamination issue).
