Mix your meatloaf up (I always add some purreed peas into the mixture so that there is some vegetable to it - and by the way I HATE peas but this is good). Shape the meatloaf into donuts in the pan and bake (less time then normally as now you have tinier individual meatloaves). In the center hole you can put mashed potatoes (with cauliflower mashed into them), mashed carrots, etc. I do this with ground turkey and chicken as we don't eat beef, but this will work with a regular beef meatloaf. Then cover with a slightly sweet tomato based sauce and bake-its not bad I ate all of them myself{my son did not like the look of rice in his meat.F Any suggestions for red meat & veggies? > We have been gluten free for just over a week now & are hoping to go casein > free in the next week or so. Guest guest Posted August 25, 2001 Report Share Posted August 25, 2001 I don't think 3 months is long enough to be on this diet...I have always read AT LEAST 6 months, preferably 1 year because it takes a very long time for gluten to leave the body...BUT, the younger the child, the less gluten build up there is in their body to get rid of. I would suggest trying a reward system to get them to eat red meat and veggies...like if you eat so much you get a gfcf treat (start slow, maybe 2 bites of meat or veggie, then they get the treat and gradually increase the amount they need to eat to get the treat). I do not know about the Flintstones vitamins...you definately need to verify if this is gfcf. My son never wanted to eat any type of meat before the diet, but since the diet, he now eats almost all kinds of meat (at least all the kinds our family eats Also, at 2.5 years old, children often do not like eating meat or veggies, so I would not worry too much...I would just never force them to eat anything, try to make it as fun as possible with rewards...good luck!
