I have been successfully making non-GFCF pancakes for years, and understand the importance of not overmixing the liquid and dry ingredients. The problem I am having is this - the inside of my pancakes is thick and goopy and uncooked. The outside is cooking well and appears normal with bubbles forming on top as expected. I've tried varying the amount of water used in the recipe and the temperature of the griddle, but I'm getting the same results. THEY JUST DON'T COOK!!! If you are cooking them on medium or higher they are cooking too quickly on the outside and not enough on the inside. Also, don't make them too thick.
