Mara,I have made fermented veggies just once so far -- couldn't get the 4 other people in our house to enjoy it with me so I am just now finishing it myself! ; ) I used an old fashioned swing top glass canister. Homemade sauerkraut is still on my todo list, but I did find a relatively

inexpensive one gallon crock. Go to Amazon.com and do a search for " sauerkraut

crock " . Among the results you'll find an Ohio Stoneware Old Fashioned Crock for

about $15 USD.

Hey Mara,

I have a Harsch.. It's not needed at all. Takes some time to get used to as

well... A plain glass jar is awesome as batches self correct!

I want to can! I have a steam canner, but haven't used it yet. I'm going to do

peaches this summer. I'd like to do tomatoes, but I can't remember if it's safe

to use a steam canner with them.
