Guest guest Posted July 13, 2001 Report Share Posted July 13, 2001 I just took out my box of potato starch and I bought it during Passover but the recipe is for Potato Starch Sponge Cake. This is it. 8 eggs 1 1/2 cups sifted sugar 1 1/2 tsp. grated lemon grind 3 tbsp. lemon juice 1 full cup potato starch sifted Dash of salt if desired Seperate the 8 eggs. Using an electric mixer, beat the 8 egg yolks for 2 minutes at high speed. Add the lemon juice, sugar, and lemon rind and mix for 2 minutes at med. speed. Gradually add the sifted potato starch and continue mixing at med. speed for an additional 2 min. Beat the eggs whites till stiff and fold the beaten egg whites gently but thouroughly with the yolk-sugar-starch mixture. Place in an ungreased 2 piece 10 " tube pan and bake at 350 for 55-65 minutes or until the cake springs back when firmly touched with the fingers.
