When I was a kid Mama stuffed dates with pecans and then rolled them in shredded coconut. We also made our version of the Lara bars, we'd grind dates and raisins (whatever dried fruit you like), and finely chopped nuts and just mix them. Again, roll in coconut. We made small round balls of them and kept them in the freezer which somewhat helped the " eat the whole batch " problem. At least they were out of sight. Since I do tolerate whole nuts at this juncture, a preferred procedure is to put 2-3 dates, and tuck 2-3 pecan halves into them, squishing the date around the nuts. I get dates, and nuts, but no spices -- and I control how much carb I'm eating by controling how many dates I eat. Quote Link to comment Share on other sites More sharing options...

Guest guest Posted March 17, 2010 Report Share Posted March 17, 2010 Funny, made me think about peanut butter and honey balls/cookies that my mom put in the freezer (sometimes with corn flakes but not usually) and we ate them frozen. Guest guest Posted March 17, 2010 Report Share Posted March 17, 2010 When you decide to make your trail mix, I have a suggestion. A few months into SCD I decided to try to make some cookies. I was nowhere near eggs then, but I thought OK, what if I get almond flour out and some almond oil and make it the consistency of shortbread cookies? I put a little honey or stevia (I forget) in, too. I patted it out and cut it in squares and baked it until it was light brown... and found, it didn't stick together. I had invented delicious cookie crumbs. But something like this might be just perfect for trail mix.
