Guest guest Posted January 31, 2010 Report Share Posted January 31, 2010 Hey guys , just finished my first conversion of a fish recipe, I think it came out pretty good :Pan fried cod with mushroom ragout : 3 tbls Butter 4 tbls olive oil 1 shallot 8 oz crimini mushrooms 8 oz white mushrooms 3 cloves of garlic 1/3 cup of diet gingerale lemon peel from 1 lemon lemon juice from half a lemon 1/2 teaspoon of thyme Melt 2 tbls butter with 4 tbls oil when melted add chopped shallots cook till soft . Add mushrooms and cook till they are soft. Add rest of ingredients and cook down, when thick stir in last tbls of butter. Add salt and pepper to taste. Cod seasoned with salt and pepper and fried in butter and olive oil . I served it over a bed of cauliflower mash with chives.
