Yes I think a stand mixer is a necessity{at least for me} I could not live without my kitchen aide. jWe have a small one and it handles the load just fine-but if I was just buying and could afford to I would opt for more power. Bette Hagman's books discuss the fact that certain bread makers do a better job of mixing the sticky gluten-free doughs. I know she mentioned a no-longer-available model, that looks like R2D2, that worked well; I had a handmedown model that was similar. But I find round bread annoying, and personally think it much easier to use a Kitchenaid mixer since most of the gluten-free doughs rise just once.
