For me, cakes are one of the easiest things to bake from scratch.

's book has a wonderful recipe for pineapple velvet cake

(doesn't taste like pineapple, tho). Rich & dense like a pound

cake. Check in at the egroup gfcfrecipes for help & recommendations

for cakes and let the listmates know what items you have on hand.

You'll get fast answers there, too, as well as access to a zillion

recipes in the archives. It's also a great support group for the

bread-baking impaired.
