I made my son a snorkel man cake for his birthday from familyfun.com and it was adorable. I just substituted for what my son could have. If you need some help e-mail me privately. Guest guest Posted August 19, 2001 Report Share Posted August 19, 2001 * Phyllis, If it were me I would buy the chocolate cake mix from Miss Robens - it is awesome, and I never made any bad cake mixes of hers. 1 - call for a catalog or go online at www.missroben.com I buy MANY of their products. It is a very easy to understand catalog, has tips and recipes in it. Here are some frosting recipes- try them ahead of time if you want, I have not made any of them yet: *************** I like this recipe.1/2 cup light corn syrup 1 egg white 1/4 tsp cream of tarter 1 tsp vanilla, in saucepan bring syrup to a boil over med heat. In a sm mixing bowl beat egg white and creamof tarter untill soft peaks form beat in vanilla gradually beat in hot syrup and continue beating for three minutes untill stiff and shiny makes two cups. Comes out firm just make sure the cake is cool. F ***************** Frosting 1 cup powdered sugar 1/4 cup Hershey's chocolate syrup 2 tablespoons shortening 1/2 teaspoon vanilla dash salt To make the chocolate frosting, combine all the frosting ingredients in a medium bowl and mix well with an electric mixer until smooth. *********************** gfcf cooked frosting (whipped topping) 1 cup gfcf " milk " (I used a combo of Mocha Mix and Pacific Rice Milk) 6 Tbs. gfcf flour (I used rice flour) 1 cup Crisco (I used a blend of regular and butter flavored Crisco...1/2 cup of each) 1 cup sugar 1 tsp. gfcf vanilla extract Pour flour into a medium sized sauce pan. Using a wire wisk slowly add " milk " , wisking as you add it. Make sure you wisk out any lumps. Put pan on medium heat. Constantly wisk while mixture thickens(this only takes a minute or two). Once it is really thick take it off the heat and cover it with a lid (this is important, otherwise it will lump up). After it has cooled a bit, whip it with wire wisk once more (to get out any lumps) cover with lid again, and then put it in the fridge to finish cooling. With an electric mixer, cream together the Crisco, sugar, and vanilla. Beat until fluffy (scraping sides of bowl often) Once it's fluffy, add the cooled flour and " milk " mixture. Beat with electric blender until desired consistency. The longer you whip it, the fluffier and more whip cream like it gets (remember to scrape sides of bowl often while whipping it) You can use it right away if you're using it as a whip topping. Guest guest Posted August 19, 2001 Report Share Posted August 19, 2001 Pamela's Ultra Chocolate Brownie Mix has a recipe for chocolate cake also. We buy it at our hfs. We just used it for ' birthday party and it was pretty good. It says something about a cross-contam risk, but I've used the mix for brownies before and didn't see a reaction. ( I use Willow Run) Combine 2 1/2 cups powdered sugar and 1/2 cup cocoa Add alternately with 1/4 cup milk sub ( I use soy milk) Add 1 tsp. GF vanilla Use more p. sugar or milk if needed.
