Guest guest
Can you use some type of bread crumbs (either premade or made from toasting your own bread and grinding in a food processor)? Also any egg sub that works for binding should work fine. For example, the flaxseed recipes, gelatin recipes, baking powder/oil/water recipes. If you need more specifics feel free to ask. Guest guest
I have held meatballs together with flaxseed binder. I soaked 2 Tbsp. of flaxseed meal in a half cup of lukewarm water for somewhere between 30 minutes and a few hours. I should think it would work with salmon, but haven't tried it. Speaking of salmon, I suspect it makes a difference, mercury-wise, whether your salmon is " Atlantic farm raised " or from the Pacific Northwest. I was looking for the latter yesterday at Trader Joe's, would have tried it had I found it. My son had seizures, prior to chelation, from Atlantic farmed salmon. I have heard, but not confirmed, that it is high in mercury. I think the rice crackers I used (Savory Thins from Trader Joe's) have safflower oil in them, so won't work for you. I can't remember whether Blue Diamond Nut thins do or don't. You could try unsulphited potato flakes (like Barbara's instant mashed potatoes) if you can't find cracker crumbs. I have used these, or poha, in meatballs and chicken breading. Lorilyn
