But, since WLS, I can only eat chopped spinach. Whole spinach is just too hard to chew up well...the cooked kind, that is. My husband buys lamb liver ... it tastes so much 'cleaner' than beef liver (which I absolutely detest). He fries it in a little olive oil - no breading - with onions and some chopped garlic, salt, pepper to taste ... yummmmmm! I never liked liver until he fixed lamb liver for me. Chicken livers are good too - still no breading - cooked the same way. The liver he buys is from lamb that are fed on small farms and killed a certain way - the meat is so flavorful, not like the mass produced stuff you find in chain grocery stores. ROFL! I have never, ever liked liver. I had a boyfriend after college who had been a chef's assistant in a 4-star restaurant in Tehran, Iran. That boy could make sauces that were utterly exquisite. But he could not make a sauce that would hide the taste of liver from me. He tried everything, because he loved liver and wanted me to enjoy it too. I had some fantastic sauces, but that first bite of liver -- ew. I specially requested it from my Mother...with boiled potatoes and spinach! I just ignore what live does when it isn't cooked, just like I don't want to know what is in hotdogs or bologna! The morning after my mother would roast a chicken, my father would make chicken liver and eggs. Could not stand waking up to that smell. My brothers and I used to beg her for chicken cutlets. She thought for the longest time that we loved her cutlets, then she finally caught on, but by then we were old enough to say either we're not going to eat dinner or we'll have a peanut butter sandwich. There are a few things that I won't cook in this house and Tim loves them so he orders them while we're out, liver, lamb, duck, venison and his new favorite buffalo burgers. If he wants them bad enough, he'll wait until I have plans with friends to go out to dinner and he will pick something up on the way home and make it for himself. Ok, I was with you on the other ones, mostly because they have such a distinctive smell, but what's up with the buffalo? It just smells like lean beef, and tastes like sirloin. Does it have an odd smell to you? I love everything except the liver, but I will admit they smell different when you're not used to cooking them. But buffalo -- heck, if I could afford it, I would only eat buffalo instead of beef. Can't eat a lot of it, because it is dense like beef. It sure tastes better!!!! And is so much leaner.
