Most of them have Xanthan gum and/or other preservatives

added to them.

It's really easy to make however.

Added ingredients. Ever can I've ever picked up has had added sugar, natural flavors, or something else in it that's not supposed to be. In addition to that, sometimes the canning process itself makes it illegal, or reactive to some.I make my own coconut milk out of coconut flour. It's super cheap and easy to make. The ones I saw in the store, out of the 4 different brands, all had guar gum (illegal) added except one. It has cocounut extract, water, potassium metabisulfite. It's a product of Thailand. DarleneIntestinal Dysbiosis/CFSSCD 1 month

I tried coconut milk in my coffee and wasn't impressed. I'd rather just drink it black. Fresh almond milk is good in coffee, or depening how advanced you are you can buy some lacteeze drops (or whatever brand you like) and put a couple drops into a little bit of cream or half and half for 24-48 hours to give it plenty of time to break down the lactose. Then use that in your coffee. Coffee has always given me a reaction.... Well try it and see.I use coconut and almond milk, both. Does it come out watery or is it nice and thick and creamy so that I could use it in my coffee? Because they put thickeners in it which are illegal.
