Here's Alton Brown's buffalo wings. I've been searching Foodnetwork

this week for the game. One is close (no link yet) but calls for 2 t.

worcestershire which is illegal. I'm not sure how it would be without

it. There's always anchovies or omit but I don't know.

I wasn't broiling them. I was baking them...I put the tobasco sauce and butter on after I baked them.

Honey burns faster just fyi.

I posted the Alton Brown recipe because he always has the 'how-to'

recipes for everything.

I think I just bake them on 400F and they get crispy. They are a

quick fix but I haven't made a ton at one time.

Thanks for recipes. They both look good. I hope they work in real life. I plan to try one or both of them when I have time. I noticed that several of the recipes I saw on some other sites where I looked call for cooking wings on the grill. Maybe that's an indication that the smoky thing is not uncommon. Last weekend, I made chicken stock and shrimp stock. The cheap ice trays I used for freezing the broth were definitely cheap as they were very time consuming almost impossible to work with. I plan to toss them. Weekend before last, I made beef stock and persimmon muffins with coconut flour. The muffins didn't turn out right for me. They tasted too eggy and had a dull, faint taste of persimmons. I threw

them in the freezer for a time when I'll be absolutely famished! So, as you can tell, my weekends have been filled with action-packed cooking joy!

On a good note, I did find Cento pizza sauce at Publix recently. It was very good and conveniently quick, too.

Maybe when/if I get most of the cooking behind me, I'll be able to get back to my old routines.

Does anyone know of a legal prepared hotsauce that taste like 's?

Or does anyone have a good recipe?

's lists:

Aged Cayenne Red Peppers, Distilled Vinegar, Water, Salt and Garlic Powder

Seems like it could be easy to make (with legal garlic powder of course) if I

knew the proportions...

Don't know about 's, but I do know red Tabasco sauce is

legal.

I live near Buffalo, home of the chicken wing (and the Anchor Bar that developed them). If it tastes like theirs, or like "Buffalo" wings in general, then I do know (and it's pretty darn good!). The ingredients sound right. (But the Anchor Bar's sauce has illegals in it, unforutnately.) Emeril's sauce -- which my grocery store sells -- works for me, but it may not for some because of the last ingredient. If you want crispy wings they get crispiest being placed on a rack in your pan, and to control the grease, a not-too-shallow pan: NOT a cookie sheet.  (My turkey roasting pan -- high sides with rack in the bottom works perfectly.)  You could also just fry them in grapeseed oil or peanut oil until they're as crispy as you like, both of those oils are good for you, especially the grapeseed oil, and it has a high smoke temperature (then add the sauce, and some butter, if you can eat it, as restaurants do). Forget about all those other ingredients that some people put on the wings while they're baking -- if you're baking them; not necessary at all. Just bake crispy, then coat with sauce. Eat.
