Guest guest Posted August 26, 2001 Report Share Posted August 26, 2001 I am going to try to convert two of my family's recipes, since they seem like they will lend themselves easily to substitutes (don't take much flour)--Potato Dumplings and Lefse. I am wondering what to use as a substitute, but I am thinking potato starch or cornstarch would probably be the best to try. These are the ingredients to make Potato Dumplings. I don't really have much of a recipe; we just make them in my family. (I do have a recipe somewhere for the lefse, I think--Main ingredient is leftover mashed potatoes). 10 lbs. potatoes (raw, peeled) (bag of regular cheap brown ones that always go on sale--red potatoes don't work well--too mushy). 3 lbs. onions (raw, peeled) (or to taste) (again, just the cheapos do best) 1 lb. bacon (1/2 lb. raw, 1/2 lb. fried) salt & pepper enough flour to form a dough You run the potatoes, onions, and 1/2 lb. of bacon (raw) through a hand-cranked meat grater (kids have fun with these). Put all in a large bowl and mix well. Do not drain. Salt & pepper. Add enough flour so it sticks together. Form balls (a bit smaller than a baseball), and drop into boiling salted water. Cook until done all the way through (hard to describe--it's one of those " until it looks this way " things that you just get used to). These freeze well (wrap each ball in plastic wrap; then, put all into zipper storage bags). You can microwave these, or cut them into chunks and fry them. Traditionally, these are served with bacon on the side, and with melted butter or melted bacon grease drizzled over them (the latter being my preference). This is often the main part of a meal, with sometimes a light soup on the side. These are cheap to make. On sale, a 10# bag of potatoes runs around $1.99 around here. On sale, a 3# bag of onions runs around 99 cents. On sale, bacon is around $3/lb. This makes enough for several meals. Enjoy!
