I have talked to my hairdresser and she did not order the special

shampoo for me. She said that if I was going to lose hair to this

surgery, than I would lose it no matter what I did. She laughingly

told me I had too much hair already and could stand to lose some

(this did nothing to comfort me). The good news she told me, is

that the other ladies she cuts hair for that has done this has had

their hair grow back in.

I like the one at Ruby Tuesday and a friend said Cheesecake Factory has

a sugar-free one now too. I've altered slightly from the South Beach

Diet Cookout, here you go Kelley, just entered it in Splenda recipe

contest :). I've been cooking since I was born and have TONS of recipes

so let me know if you're looking for anything else :).

Ricotta Cheesecake

4 c. reduced-fat ricotta cheese

3 eggs, separated

2 Tbsp. honey

1/2 c. Splenda

3 Tbsp. cornstarch

1/2 Tbsp. vanilla extract

1/2 Tbsp. almond extract

1/2 c. low-fat graham cracker crumbs

2 Tbsp. trans-free margarine

- Preheat oven to 350 degrees.

- Spray 9 " springform pan with non-stick cooking spray and pour graham

cracker crumbs into pan. Melt margarine and pour over crumbs. Mix

thoroughly and press crumbs to bottom of pan. Set aside.

- In large bowl combine ricotta cheese, egg yolks, honey, Splenda,

cornstarch, and extracts and beat until smooth.

- In medium bowl, whip egg whites with clean beaters for 2 minutes, or

until soft peaks form. Gently fold egg whites into ricottta cheese

mixture.

- Pour mixture into prepared springform pan.

- Bake for 30-40 minutes or until light golden brown and set.

Servings - 10

PreHeat - 350°

Prep Time - 10 min

Cooking Time - 30 min
