Anne,

Our dietitian told us that the spelt bread is a no no as is Kamut. I thought

they were a good alternative too at first. Food for Life is a good one. We

are still trying to find a " store-bought " bread that our son will eat.

As for the bulk flours, check you HFS.

Anne, you can not use spelt or oat on this diet.

The flours that I can think of that you can use are -

sorghum flour, rice flour, garbanzo flour, sweet rice flour, brown rice

flour, potato starch, potato fl;our, quinoa flour, amaranth flour,

arrowroot starch and tapioca flour.

The best is to make a mixture of flours in a recipe. If I have a recipe

that calls for 2 cups flour I may put 3/4 cup sorghum flour, 1/2 cup rice

flour, 1/2 cup tapioca and 1/4 cup potato. And next time I mix others.
