Guest guest
Can anyone help me come up with an egg sub to use as a binder in salmon patties? I know there is a conflict over whether salmon contains high mercury or not (there are conflicting articles about that), but my son's allergist (who is a DAN! doctor) recommended that he eat salmon, and so it is one of the few things that he can eat. I want to make slamon patties, and crush the bones into them, so that he can get some extra calcium. I am competely unable to find duck eggs, and he is very allergic to chicken eggs, so what do I use to bind the salmon patties? Also, I will need crackers to crush into them, and I'm not having any luck there. He's also allergic to soy and safflower, so that eliminates alot of the GFCF crackers. Anyone have a cracker recipe? ===== __________________________________________________
