Here's one - don't mind the typos

Preheat oven to 325

Beat together-

3/4 cup coconut butter or gfcf margarine (rrom temp)

1/4 cup mollasses

1 cup brown sugar

1 tsp. vanilla

In another bowl blend-

3 cups plus 2 TBSP. flour mix

1 tsp. xanthum gum

1 teASPOON SALT

1 TSP. CINNAMON

1 1/2 TSP. GINGER

3 tsp. baking powder

Alternately stir the above dry ingredients AND

1/2 to 2/3 cups WATER

into the butter/sugar mixture thats in your 1st bowl, using just enough

water to hold the mixture in a soft ball.

Refrigerate for at least 1 hour (will keep in refrigerator for several

days)

Dust some waxed paper with acceptable flour and roll out about 1/2 the

dough onto this paper till its about 1/2 " thick. Transfer to nonstick

baking sheet or greased shhet, by placing baking sheet ontop of paper and

flipping. Continue to roll dough till its about 1/8 " thick. Cut

crackers with cookie cutter or make just plain square crackers. Prick

each cracker 2 times with a fork.

Bake for 20 to 25 minutes. Repeat with other 1/2 of dough. Makes about

40 crackers.
