Guest guest Posted July 20, 2001 Report Share Posted July 20, 2001 This one looks like it came from lisa Ackerman originally to give credit where due. quinoa crackers 1 cup quinoa flour 4T starch{whatever kind is acceptable for you} 2 t baking powder 1 t xanthan gum 2 T oil 6-8 T water Mix the dry ingredients together,make a well in the middle and add oil and 6 T water. Mix by hand adding more water untill you are able to form a ball{you must use your hands to work this dough}Then rool out and cut into desired shapes and place on cookie sheet.You can prick wiht a fork if you want them to look like saltines,but its not necessary. Bake at 325 for 15-20 minutes depending on how crunchy you want them. You can use other flours in place of the quinoa and it still turns out well. These crackers are not fussy and if you add too much water just add more flour. You can add stevia for sweetness or honey if you child can have it.
