We have been using Peptizyde from www.houstonni.com for casein/gluten for 4 months with excellent results. My boys and I are extremely sensitive to casein, even a little bit causes a migraine, and we have had no problems in all this time. It has only been out since April. I have completed a summary report on 151 parents' experiences with this that was posted earlier. Also, there is a Mixing Suggestions document I will send you that has many ideas that parents have used to get supplements into their kids. The enzymes would be good if you knew there might be contamination (give beforehand) or if it was within 90 minutes of an infraction (unplanned, after the fact). Otherwise enzymes will not be very effective. Another idea is to use Pepcid AC - tablets, not chewables. These have worked well for others even a day or two after the fact. Something in the Pepcid blocks any loose peptides from attaching to the receptors in the brain and thereby reduces or eliminates any reaction. I have tried it three times and can't say it helped, but other parents have had great success with it. .
