The nuts release their oils more easily that way and are easier to grind into nut butter. A suggestion I read about from another list member says to add a little walnut oil to the pecans when grinding. I haven’t tried that yet. I just add a few walnuts to the mix. I’m not familiar with the Omega juicer so can’t comment. You’ll have to experiment! I think it's a question of leaving it run long enough to get smooth (where with a blender apparently running too long with something heavy like nuts can burn it out).
