The egg is raw. And you do not get salmonella if the eggs are fresh and washed the shell before use. Salmonella is not as easy caught, and it is from the shell not from the actual egg. Of course in the hot summer months you need to keep a close watch on what eggs you use, because of the heat. Store bought mayo uses dehyadrated eggs, but you can't do that at home. I have done mayo my whole life, never had a problemm (hope I never will either). But as I said, if you know what you are using, the salmonella problem is not an issue.
