I usually drop donut hole size pieces of the batter from a tsp into the hot oil, but last week I used the recipe and added a little less sparkling water in it, so it was a thicker dough. I was able to carefully roll the dough out (with gf flour mix) and cut out real donuts. They were really good. I did this because my son's class was having donuts in class. I sent donuts for my son, another student on the diet and an extra for the teacher. Now she'd like my recipe ) I usually roll the finished donuts in sugar/cinnamon or powder sugar mixture. For the regular donuts, I went all out and put a chocolate glaze with sprinkles on it......looked just like the real thing. Noah's Bread 1/2 cup white rice flour 2/3 cup tapioca flour 1/3 cup potato or corn starch 1/2 tsp salt 2 tsp baking powder 2 tsp guar or xanthum gum 1 egg 1/3 cup oil (I've used olive, cannola, safflower, and vegetable) 1/2 cup cf milk (I use almond, rice or dairy free mix) 1/3 cup sparkling water (I've used perrier, club soda, various sparkling waters) Combine all dry ingredients, mix together. I combine beaten egg, oil and milk. Add slowly to dry mix. Beat well. Add sparkling water very gradually. Beat well. Drop from tsp. into hot oil or form into donuts. If you're making hamburger buns or rolls, put batter into a plastic bag, cut small hole in corner, and " pipe " onto cookie sheet or hamburger bun pan. I've used Noah's bread to make great pizza crust, bagels, big soft pretzels, cinnamon rolls and more. I find it to be a very versatile recipe and my son loves it. Unless I'm only making donuts, I almost always double or triple this recipe.
