Sharon,I usually use chicken wings so that I get the flavour from a small amount of meat and the goodness from the bones. Then I usually just toss everything and just keep the broth and I don't feel guilty because there isn't much meat on the wings. If you do want to remove the meat early, I would suggest returning the bone to the broth to get all the goodness from them. Also, the Weston A. I know the bones and carrots need to cook for 4 hours, but can I take the chicken meat out before that and then add it back prior to eating? I've made the soup before and the chicken meat gets so soft and stringy after 4 hours that it's kind of hard to eat.
