I don't know if this would work in all products, but I think I'm going to try it. Plus, millet (teff) is the grain that is the furthest removed from wheat. It tastes good, too. Arrowhead Mills is one company that I know makes the flour. They also carry whole grains--good for hot cereal. But if remove gluten and substitute RICE (or rice-based products) for the gluten-containing products, don't you cause constipation? I've been told NOT to give my son rice (because of his chronic constipation). Now I don't see how I can remove gluten from his diet without relying on rice-based substitutes. Any advice?
